Made with light rye sandwich bread (you can use any bread you like), free-range eggs, creamy Cheddar cheese and grilled onions, this breakfast sandwich hits many nutritional requirements: protein, fats, carbohydrates, fiber, and plenty of vitamins and minerals.
When it comes to the sauce, you can choose between mayonnaise, ketchup or BBQ sauce OR you can do what we recommend and combine all three. It makes a wonderful sauce for any breakfast sandwich and works well in this fried egg creation.

- Large eggs
- Yellow or red onion
- Cheese - sliced Cheddar cheese or other type of cheese like Swiss or Provolone
- For sauces: mayonnaise, BBQ sauce and ketchup

Step 1. Slice the onions. Heat a skillet over medium-high heat. Add olive oil and crack two eggs on one side and add the onions to the other. Season with salt and pepper. Cook for a couple of minutes, until the egg whites are almost cooked through. Stir the onions once or twice.
When the egg whites are almost done but the egg yolks are still runny, use a spatula to flip the eggs over and after a few seconds, flip them back. This will seal the egg yolks and finish any uncooked whites. Turn the heat off and set aside.
Step 2. Mix together the mayonnaise, ketchup and BBQ sauce.
Step 3. Heat up a separate clean frying pan or remove the onions and eggs.
Butter the bread slices on one side or simply place a few thin slices of butter on top. Place the bread in a hot frying pan, butter side down, and cook for about a minute or until golden brown and slightly toasted. Place the cheese slices on the top, then flip the bread over with the cheese facing down. Cook for 30 seconds, until the cheese melts and grills slightly, then use a spatula to slide under the cheesy bread and transfer to a plate or a cutting board.
Spread the sauce on the side, top with fried eggs (you can cut them in halves), and grilled onions. Close the sandwich and serve as is or cut it in halves.

Best Fried Egg Sandwich
Ingredients
- 1 tablespoon olive oil for cooking
- 2 eggs medium
- ¼ onion yellow, thinly sliced
- 1 oz cheddar cheese sliced or your favorite cheese (about 28 g)
- ¼ teaspoon salt to season + pepper
Sauce for a breakfast sandwich
- 1.5 teaspoon mayonnaise
- 1 teaspoon ketchup
- 1 teaspoon barbecue sauce
- 2 slices sandwich bread we used light rye
- 2 teaspoon butter
Instructions
- Slice the onions. Heat a large skillet or frying pan over medium-high heat. Add a splash of olive oil and once hot, crack two eggs on one side of the pan and add the onions to the other side.
- Season the onions and the eggs with a little salt and pepper. Cook for a couple of minutes, until the egg whites are almost cooked through. Stir the onions once or twice.

- Mix together the mayonnaise, ketchup and BBQ sauce. This can be done while the eggs are cooking. This step is optional as you can also add each sauce to the sandwich separately. However, if making more than one serving, it’s quite efficient to get the sauce mixed up so it’s ready to go.
- Let’s get the toast ready. Heat up a separate clean frying pan or remove the onions and eggs. Butter one side of each bread slice or simply place a few thin slices of butter on top. Place the slices in a hot frying pan, butter side down, and cook for about a minute or until golden brown and slightly toasted. Place the cheese slices on the top, then flip the bread over with the cheese facing down.
