- 3 cups chicken shredded 1 lb | 450 g
- 1 cup cream cheese divided (8 oz | 225 g)
- 1 cup cottage cheese divided (8 oz | 225 g)
- 14 oz cream chicken soup 1 can
- 1 teaspoon garlic minced
- 1 teaspoon onion minced
- 20-25 ritz crackers crushed
- 3 tablespoon butter melted
- Dried herbs and garlic powder for crackers (optional)
Instructions
- Preheat the oven to 355 F | 180 C. Grease a 9x13 inch baking dish.
- Prepare 2 medium bowls, one with rice and one with shredded chicken.
- In the rice bowl, add ½ cup cream cheese and ½ cup cottage cheese. Lay with a spatula at the bottom of the baking dish.
- In the chicken bowl, add ½ cup cream cheese, ½ cup cottage cheese, chicken soup, garlic and onion. Add on top of the rice.
- Transfer in the oven and bake for 30-35 minutes, uncovered.
- Combine ritz cracker and butter in a small bowl. Sprinkle on top of the casserole. Bake for another 5 minutes.
