Ingredients
  

  • 3 cups rice of cooked 16 oz | 450 g
  • 3 cups chicken shredded 1 lb | 450 g
  • 1 cup cream cheese divided (8 oz | 225 g)
  • 1 cup cottage cheese divided (8 oz | 225 g)
  • 14 oz cream chicken soup 1 can
  • 1 teaspoon garlic minced
  • 1 teaspoon onion minced
  • 20-25 ritz crackers crushed
  • 3 tablespoon butter melted
  • Dried herbs and garlic powder for crackers (optional)

Instructions
 

  • Preheat the oven to 355 F | 180 C. Grease a 9x13 inch baking dish.
  • Prepare 2 medium bowls, one with rice and one with shredded chicken.
  • In the rice bowl, add ½ cup cream cheese and ½ cup cottage cheese. Lay with a spatula at the bottom of the baking dish.
  • In the chicken bowl, add ½ cup cream cheese, ½ cup cottage cheese, chicken soup, garlic and onion. Add on top of the rice.
  • Transfer in the oven and bake for 30-35 minutes, uncovered.
  • Combine ritz cracker and butter in a small bowl. Sprinkle on top of the casserole. Bake for another 5 minutes.

Notes

  • 3 cups shredded chicken is about 1 lb uncooked chicken breast.
  • 3 cups rice is a little bit more than 1 cup uncooked rice.
