Chicken Patty Sandwich With Honey Mustard Sauce

Ingredients
  

  • 1 bread roll, large Panini or Ciabatta, cut in halves horizontally 
  • 2 chicken cooked patties
  • 1 oz Cheddar or other cheese, sliced (about 30 grams)
  • ½ cup spinach baby leaves, arugula or lettuce
  • 1 pickle sliced thinly

For Honey Mustard sauce

  • 3 tablespoon mayonnaise
  • 1 teaspoon mustard Dijon or yellow
  • 1 teaspoon mustard Wholegrain
  • 1 teaspoon hot sauce
  • 1 teaspoon honey

For Chicken Patties

  • 1 lb chicken ground
  • ½ cup breadcrumbs Panko or regular
  • ¼ cup Parmesan cheese grated
  • ¼ cup onion finely chopped
  • 1 garlic clove minced
  • 1 teaspoon Italian seasoning dried
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

For cooking the patties

  • ¼ cup flour all-purpose
  • 1 egg large beaten
  • ½ cup breadcrumbs
  • 2 tablespoon Vegetable oil for frying

Instructions
 

Making the sandwich

  • Mix the mayonnaise with honey, wholegrain mustard and hot sauce in a bowl and set aside.
  • Cut the bread rolls in halves and spread a generous amount of the sauce on the bottom half. Place them on a flat baking tray over some parchment paper.
  • Cut the chicken patties in halves if they are quite thick. Place 3 slices of the patties on top of the sauced bread slice. If you were using square sandwich bread, you can do 2 patties per sandwich. If it's a brioche bun situation, you can leave the patty whole, especially if it fits nicely between the bread.
  • Place a few slices of cheese over the patties and place both halves on the tray into an oven, top shelf just under the broil. Broil until the cheese has just melted and the top half of the bread roll is toasted. If you don't have an oven/broil, you can leave the cheese unmelted. You may like to use a toaster for the bread.
  • Then, layer on some zesty pickles for that tangy crunch we all love. And don't forget a handful of fresh baby greens to add a pop of color and freshness.
  • Slather extra honey mustard sauce on the top half and close the sandwich. Press it down firmly and cut it into two halves.

To Make Chicken Patties

  • In a mixing bowl, combine about 1 pound of ground chicken with ½ cup breadcrumbs, ¼ cup Parmesan cheese, ¼ cup finely chopped yellow onion, 1 teaspoon garlic powder, 1 teaspoon salt, ⅓ teaspoon black pepper. Mix until well combined.
  • Shape the mixture into patties of your desired size. You can make them round or oval-shaped.
  • Place ¼ cup of flour, 1 large beaten egg, and another ½ cup of breadcrumbs in three separate shallow bowls. Dredge each chicken patty in flour, then dip it into the beaten egg, and then coat the patty in breadcrumbs, pressing lightly to ensure they adhere well.
  • Cook in a few tablespoons of oil in a large frying pan or skillet over medium heat for 4-5 minutes, or until golden brown and cooked through. The internal temperature should reach 165°F (74°C).
  • Remove the cooked patties from the pan and place them on a paper towel-lined plate to drain any excess oil. Allow them to rest for a few minutes before using them in the sandwich.

Notes

Notes: You can divide the larger roll between 2 people or use smaller slices of sandwich bread or rolls and make 2 sandwiches with the above amounts.
