Ingredients

  • 24 ounces sweet corn frozen, about 680 g
  • ¼ cup butter ½ stick, salted, about 57 g
  • 2 tablespoon honey
  • 4 ounces cream cheese about 115 g
  • ½ teaspoon black pepper
  • 1 teaspoon salt

Instructions

  • In a large skillet, melt together the butter and honey over medium-high heat.
  • Add in the frozen corn and stir over the medium high heat for 6 to 8 minutes.
  • Add in the cream cheese and cook for an additional 4 to 5 minutes, to allow the cream cheese to melt.
  • Season with salt and pepper to taste.
  • TIP: The corn will become thicker the longer it sits, if you do not want it to be real thick, cut back on the amount of cream cheese.

Notes

Storage: This dish is best enjoyed immediately after cooking but will keep well for 2-3 days. You will need to dilute it with some water or milk when reheating. It doesn’t freeze well.
