A tantalizing dish that combines the heat of spices with the richness of creamy tomato vodka sauce. It's a classic recipe with irresistible taste.

Pasta Shells Onion & Garlic A Little Vodka  Tomato Paste  Chili Flakes Heavy Cream Parmesan cheese Basil Leaves


Step 1

Cook pasta shells per packet instructions, make sure to add a teaspoon of salt to the water. Strain but reserve ¼ cup of the cooking water to add to the sauce.

Step 2

Heat olive oil in a large skillet over medium-high heat. Add the chopped red onion and salt and sauté for 3-4 minutes until it softens and turns golden brown.

Step 3

Add garlic and sauté for another minute, then pour in the vodka (if using) and stir.

Step 4

Then follow with tomato paste and stir for 30 seconds, allowing the paste and vodka to cook off slightly.

Step 5

Pour in the heavy cream and stir through.Add the chili flakes and stir through for 10-15 seconds.

Step 6

Whisk in the grated Parmesan cheese and allow it to melt slightly

Step 7

Add drained pasta, with a splash of cooking pasta water, and stir through, allowing the cheese to melt.

Step 8

Finish with a few extra chili flakes, chopped basil leaves and more Parmesan.
